$100M Egg Campus Breaks Ground As Canadian Production Hits Record
Lovo has broken ground on a $100-million industrial egg campus in Saint-Hyacinthe, Que., as record Canadian egg production drives investment in processing capacity.
The farmer-owned company is building the project on more than 600,000 SF on Picard Street in the Saint-Hyacinthe industrial park, adjacent to its existing plant. The first component is a grading facility of more than 200,000 SF, nearly three times the size of Lovo’s current operations.
The expansion comes as Canadian egg production reached a record 997.2 million dozen in 2025, up 9.2% from a year earlier. Egg sales rose 9.8% to $2.5 billion, with Ontario and Quebec accounting for more than half of national production.
Lovo plans to use the campus to expand beyond grading into secondary and tertiary food processing, with future facilities including production space, an experimental kitchen, research areas and offices. Frare Gallant is leading construction.
The development also adds to Saint-Hyacinthe’s concentration of agri-food investment, including Jefo’s planned $256-million expansion.
Construction is moving ahead as Canada’s supply management system faces renewed scrutiny in its trade relationship with the U.S., adding a domestic processing and food security dimension to the investment.
