
Salt Grass & Rare Restaurant Coming to Lanterra’s 50 Scollard
Lanterra Developments has unveiled plans for a new upscale restaurant within the company’s 50 Scollard luxury condominium project in Toronto’s Yorkville district.
The restaurant, named Salt & Rare, is set to open when 50 Scollard is completed this summer.
Salt & Rare is the latest venture from reknown restaurateurs Michael Dabic and Derek Von Raesfeld, celebrated for their success with local eateries the Butcher Chef, Oliver’s Steakhouse, and Michael’s On Simcoe.
The duo aims to create an exquisitely appointed fine-dining experience that blends culinary innovation with cutting-edge architecture and design.

Salt Grass & Rare will feature a contemporary dining room, bar and lounge, and a grand terrace nestled in a lush green space complete with water features. The restaurant’s design will be a collaboration between Forma Officium Architects and the restaurant group’s in-house design team. The culinary programme will be led by Chef Derek Von Raesfeld, with details to be revealed closer to the opening.
“We are excited to unveil Salt Grass & Rare, a distinctive approach to fine dining in Yorkville,” said Dabic, co-owner of Salt Grass & Rare. “Our unique twist on the modern steakhouse and its focus on culinary excellence will also showcase the latest trends and developments in architecture, design, and art.”
The 50 Scollard development is a 41-storey tower will contain 129 suite units ranging from 1,200 to over 5,000 square feet. Almost all residences will feature elevators opening directly into the units, with many floors dedicated to one or two units maximum. Designed by Foster + Partners, led by Pritzker Prize-winning architect Norman Foster, the building will aim to redefine urban living with hotel-inspired services and unparalleled amenities.
Residents will enjoy features such as chauffeured house car service, a carwash facility, a pet spa, valet parking, and an exclusively stocked wine lounge. Interiors will be crafted by Alessandro Munge of Studio Munge, who was named the 2018 Designer of the Year by Contract Magazine. Outdoor spaces will feature the designs of Stoss Landscape Urbanism, while each suite will include sophisticated Molteni&C Dada engineered kitchens.
