Le Fou Fou Food Hall to Open at Royalmount
MTB Collective has announced plans to open a large European-style food hall at Montreal’s forthcoming Royalmount shopping centre.
The 30,000-square-foot food hall will be known as Le Fou Fou and is being spearheaded by entrepreneur David Haas, MTB’s founder, who has invested in food and beverage ventures across North America.
Le Fou Fou will boast an array of 12 culinary offerings, four bars and an expansive indoor/outdoor area that can accommodate 900 guests, according to a news release.
LemayMichaud has designed the space. Jay Coldren, an Arlington, Va.-based food and beverage industry consultant, will helm the food hall. Coldren has held leadership positions with Time Out Market, Dean & DeLuca, Edition Hotels and the Inn at Little Washington in Washington, D.C.
Chefs contributing to the food hall will include James Beard Award winner Tony Messina (Uni Boston), Hanhak Kim (Bar Otto), Lenny Lighter and Peter Katsoudas, who are collaborating after previously founding rival steakhouses Moishes and Rib’N Reef, and twin brothers Javier and Sergio Torres (Hogar Steakhouse.)
Le Fou Fou will offer table service and self-serve options. To avoid lineups customers will be able to use high-touch order and payment systems.
In the works for years, the 824,000-square-foot Royalmount midtown development is scheduled to open in August. The 100% carbon-neutral development, is slated to feature about 170 retailers, including 60 restaurants and experience-based offerings.
Carbonleo, a Montreal-based development and management firm, is partnering on the project with Greenwich, Conn.-based investment company L Catterton.
